Strawberry Pretzel Salad

This is one of my FAVORITE desserts...ok I have a lot of favorite desserts but this is definitely up there! I have been eating this for as long as I can remember! Apparently it is more common in the south because when I mentioned it to people up here they looked at me like I was crazy! Ha! So when I got called up to make a dessert for guitar night I decided it was time to introduce it to the Midwest! It wasn't as pretty as it could have been, but it still tasted darn good!

Strawberry Pretzel Salad


Ingredients
2 C. crushed pretzels
3/4 C butter, melted
3 tblsp white sugar

1 (8oz) package cream cheese, softened
1 C. white sugar
1 (8oz) container frozen whipped topping, thawed

2 (3oz) packages strawberry flavored gelatin
2 C. boiling water
2 (10oz) packages frozen strawberries

Directions:
  1. Preheat oven to 400 degrees.
  2. Stir together crushed pretzels, melted butter and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9x13 inch baking dish.
  3. Bake 8 to 10 minutes, until set. Set aside to cool.
  4. In a large mixing bowl cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust.
  5. Dissolve gelatin in boiling water. Stir in still frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.

Oh well...I will just have to work on it! 


I had a great time at my first ever guitar night! The food was great and the company was even better! I can't wait to do it again!
